Ingredients

  • 2 small red bell peppers, halved lengthwise, seeded, stems left intact
  • 2 cups chopped seeded tomatoes
  • 2 teaspoons minced garlic
  • 8 anchovy fillets, drained
  • 4 1/3-inch-thick slices drained fresh water-packed mozzarella or regular mozzarella
  • 1 tablespoon thinly sliced fresh basil

Recipe Preparation

  • Preheat oven to 375°F. Oil baking sheet. Arrange peppers, cut side up, on sheet. Mix tomatoes and garlic in medium bowl. Season with salt and pepper. Fill pepper cavities with tomato mixture. Drizzle 1 teaspoon oil over each. Place 2 anchovy fillets atop each. Bake until peppers are tender, about 50 minutes.

  • Arrange cheese atop peppers. Bake until cheese melts, about 3 minutes. Transfer peppers to platter. Sprinkle with basil and serve.

Holy moly! Garlic Butter Chicken!

Here’s the perfect way to kick off a Monday. With a side of garlic butter sauce covered mashed potatoes and chicken breasts that are topped with bubbly, melty mozzarella cheese. The top of the week is looking better already!

We’re doing another take on my oven chicken dinners today. Last time, I shared with you a tomato baked version, today I’m bringing you chicken that’s been cooked in light garlic butter broth that you can mop up with crusty bread or go full out comfort food with and serve it with a generous dollop of mashed potatoes and steamed broccoli.

Regardless of how you decide to serve my garlic butter chicken, it’s one that you’ll certainly want to add to your regular dinner rotation.

Meals like this garlic butter chicken are my favorite to toss together on weeknights.

Being just the two of us means that we’ll have plenty of chicken and garlic butter sauce leftover for a second round. But that I can slice or dice up the chicken and toss it into something else. I’ve even used the leftover sauce to make a rice pilaf out of it, and I kid you not, this meal just keeps on getting better and better! This recipe is inspired by both my tomato baked chicken and my skillet chicken in lemon garlic cream sauce. It seems you guys love garlic as much and we do, and that gives me the so much joy I can’t even convey it to you. So this time I decided to swap out the lemon cream sauce and adding in a handful of shredded mozzarella into the mix. Cheese just makes everything better, doesn’t it?

But let me take a second to talk to you about that garlic butter sauce. It’s so darn delicious I could slurp it all up with a spoon. The chicken breasts almost poach in it in the oven so they have a chance to soak up all that flavor and then you can use it on just about anything you like! Me? I never toss it out, I use what’s leftover as the cooking liquid for rice, and I kid you not, it’s the BEST rice I’ve ever made!

Ingredient Notes & Substitutions

Ground chicken is very lean. It cooks quickly and can become dry. Brushing them with oil and garlic helps to keep them moist and they should not stick to the grill pan.

Substitute ground chicken with ground turkey or lean ground beef.

Garlic adds a nice flavor to the chicken burgers, if you love garlic, you can add more.

Substitute fresh garlic with 1 teaspoon of garlic powder (½ teaspoon garlic powder for each clove).

Fresh Mozzarella cheese is the best type of cheese to use on these burgers. It&rsquos soft and melts quickly.

Substitute fresh mozzarella with mozzarella cheese from the deli or sliced provolone cheese.

Balsamic Vinegar intensifies when it is reduced and adds flavor and a touch of moisture to these grilled chicken burgers.

Substitute Balsamic Vinegar with packaged balsamic glaze.

Recipe Summary

  • Coarse salt
  • 2 cans (28 ounces each) whole peeled tomatoes
  • 2 tablespoons extra-virgin olive oil
  • 2 garlic cloves, smashed and peeled
  • 3/4 pound spaghetti
  • 2 cups packed basil leaves (from 1 bunch), torn if large
  • 3/4 pound fresh mozzarella, cut into 1/2-inch pieces (2 1/2 cups)

Preheat oven to 400 degrees. Set a large pot of salted water to boil. In a food processor, pulse tomatoes until coarsely chopped. In a large skillet, heat oil over medium-high. Add garlic and cook until fragrant, about 1 minute. Add tomatoes and bring to a boil. Cook at a rapid simmer until sauce thickens, about 12 minutes. Meanwhile, cook pasta 5 minutes (it will still be crunchy). Drain pasta and return to pot. Add tomato sauce, basil, and half the mozzarella and toss to combine. Transfer mixture to a 3-quart baking dish and top with remaining cheese. Bake until cheese is golden and edges are bubbling, about 25 minutes.

Recipe Summary

  • ¼ cup extra virgin olive oil, divided
  • 4 raw chop with refuse, 120 g (blank) 4.225 ounces boneless pork chops, pounded to 1/4 inch thick
  • 1 pinch salt and pepper to taste
  • 4 cloves garlic, thinly sliced
  • 1 large tomato, diced
  • ⅓ cup chicken broth
  • ¼ cup dry white wine
  • 3 tablespoons minced fresh parsley
  • ¼ teaspoon red pepper flakes

Heat 2 tablespoons olive oil in a skillet over medium-high heat. Season the pork chops with salt and pepper, and quickly sear on both sides. Remove from heat, and set aside.

Heat the remaining olive oil in the skillet over medium-high heat, and saute the garlic about 30 seconds. Mix in the tomato, chicken broth, wine, parsley, and red pepper flakes. Cook and stir until thickened, about 2 minutes.

Return the pork chops to the skillet, and continue cooking 5 to 10 minutes, to an internal temperature of 145 degrees F (63 degrees C). Serve pork with the tomato and broth mixture from the skillet.
